We started harvesting garlic last weekend, July 15 in northern Minnesota. We will harvest the garlic varieties separately over the next 2 weeks as they mature at different rates. We harvest and clean the garlic by hand, sorting bulbs into categories by variety and size.

We hang the garlic for a few weeks to let it cure, which enables the garlic to be stored in a cool, dry place for the winter.
