Scrumptious Scapes are Back Again!

We have reached a fun time in the garlic cycle again – scapes are forming!

Scapes grow at the top of the garlic plant and will become a flower unless they are plucked off. Most garlic farmers pluck scapes off in order to send all the plant’s energy to the garlic bulb. Here and here are more detailed explanations of scapes and their uses.

One of the best uses for scapes is to grind them with olive oil, pine nuts, basil, and salt to make a delicious pesto! A trick is to freeze the pesto in small containers; one mini-container will season a pasta dish for four people.
